    I've done this on products - powered an analog section off an I/O pin.  It is the cheapest power control method - heck it's free and it takes no power to implement.
    If you need more current you can parallel two or more pins.  There is no problem with parallel MOSFETs, they will current share as rdson increases with temperature.

    You need to read the data-sheets of the MCU and the sensor and check the mA provided and used.

       Just an update. I tested this at a weighing scale setup. My load weigh is 1 litre of water = 2.2 lbs. I run the SparkFun_HX711_Calibration.ino and got the calibration factor. I set the calibration factor at SparkFun_HX711_Example.ino. I got the correct weight displayed which is 2.2 lbs.
